Being snowed in, inspired to post a vegetable soup recipe using what we have on hand. Substitute with any veggies and beans. Saute a mix of veggies in your choice of oil with salt and pepper and 2 teaspoons thyme. What we used: 1 1/2 cups each of carrots, celery, green beans, garlic (would have used an onion but did not have one) Next, add 64 ounces of organic vegetable stock, 1 cup tomatoes and 1 cup cooked kidney beans bring to a boil and simmer for 30 minutes, then add 1/2 cup quinoa and simmer for about 15-20 minutes more. |
